A healthy option

We’re well into January and all excuse for excess has passed… without necessarily trying to lose weight (although that is definitely on the agenda!) it seems right to start lightening meals and eating less in general and choosing what are now called ‘healthy options.’

How about this light salad, yes it does have bread, but it sounds fresh, tasty and satisfying –

Acquasala salad

  • stale bread cut in chunks
  • chopped tomatoes
  • cubed cucumber (skin taken off or left on, whatever you prefer)
  • sliced red onion
  • thinly sliced spring onions (sliced on the slant looks attractive)
  • olive oil (whatever is your favourite – i know this is an Italian recipe but I do love Greek olive oil!)
  • fresh herbs such as basil or oregano, chopped
  • any roast vegetables that you have – such as peppers, courgettes, aubergines etc
  1. soak the bread in a little water – don’t let it get sopping wet, then press out the excess water and break it up
  2. mix the vegetables – but gently, they don’t want to be mashed, they want to be themselves (don’t we all?!)
  3. add pepper and only the smallest amount of salt (or leave the salt till later) turn it over with the bread then add olive oil and the herbs
  4. leave it to do its own thing for a couple of hours in a cool but not chilled place
  5. it isn’t traditional but I guess you could add a few cubes of sharp cheese (an Italian equivalent of feta maybe?) and a few olives
